LET'S TASTE NEW : Egg Curry: A Flavorsome Terai Delight

The Terai region of Nepal is known for its rich and aromatic cuisine, where simple ingredients transform into unforgettable dishes. One such local favorite is Egg Curry, prepared with both fried and boiled eggs, offering a delightful fusion of textures and flavors. This dish, often enjoyed with rice or roti, is a comforting and satisfying meal for any occasion.


Ingredients:

  • 4 eggs (2 boiled, 2 for frying)
  • 2 large onions (finely chopped)
  • 2 tomatoes (pureed or finely chopped)
  • 1 tbsp ginger-garlic paste
  • 2 green chilies (slit)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 bay leaf
  • 1 tsp mustard seeds
  • 2 tbsp mustard oil (for authentic Terai flavor)
  • 1 cup water
  • Salt to taste
  • Fresh coriander leaves (for garnish)

Preparation:

  1. Boil & Fry the Eggs:

    • Boil 2 eggs, peel, and lightly fry them in a pan with a pinch of turmeric and salt. Set aside.
    • Crack the remaining 2 eggs into a hot pan with little oil, fry sunny-side up, and keep aside.
  2. Prepare the Masala Base:

    • Heat mustard oil in a pan, add mustard seeds and a bay leaf.
    • Once the seeds splutter, add chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and green chilies, cook until the raw aroma disappears.
    • Mix in tomato puree and cook until the oil separates.
  3. Cook the Curry:

    • Add turmeric, chili powder, cumin, coriander powder, and salt. Stir well.
    • Pour in a cup of water, bring to a simmer, and add the boiled eggs. Let it absorb the flavors.
  4. Final Touch with Fried Eggs:

    • Just before serving, place the fried eggs on top of the curry. Sprinkle garam masala and garnish with fresh coriander.
